Finding the Best Chickpea Flour . . . And A Recipe!

As hummus enthusiasts, we consider our experts at chickpea flour. Still, when we tested several major brands in a blind taste test, we were surprised that some well known brands weren’t up to snuff.

As always, we hide the brands and packages when we test—that way we aren’t influenced by any preconceived notions about brands.

Before we get to the winners, here is a recipe for a gluten-free flatbread this absolutely delicious.

Recipe: Easy Chickpea Flatbread with Vegetables

COOK TIME 25 minutes

Ingredients

  • 1 cup Bob’s Red Mill Chickpea Flour (120 g)
  • ⅓ cup Egg Whites or prepared Egg Substitute (79 mL)
  • 1 Tbsp Baking Powder
  • 1 cup Water (240 mL)
  • 1 Tbsp Apple Cider Vinegar

Your Choice of Chopped Vegetables – We Used:

  • 1 medium Tomato, sliced
  • 4 Asparagus Spears, sliced
  • Dried Oregano, to taste
  • Kosher Salt, to taste
  • 5 White Mushrooms, sliced
  • fresh ground pepper to taste

Instructions

  1. Preheat the oven to 450°F. Either preheat an oiled 10-inch cast iron skillet in the oven or oil a 9-inch cake pan.
  2. Combine the dry ingredients in a bowl. Add the wet ingredients and mix well. Pour batter into the oiled pan. Bake at 450°F for 5 minutes, then top with tomatoes (layering some into the batter). Add the rest of the vegetables on top and sprinkle with dried herbs, kosher salt and fresh ground pepper.
  3. Bake for an additional 15- 20 minutes, or until lightly browned. Serve with pasta sauce and a salad.
