Let’s talk 00 flour for pizza dough!
Double zero flour (00 flour) is a designation most common to Italian flour (although not all 00 flour is made in Italy).
Like many countries, Italy classifies flour based on how it is milled (the ash content)—type 00 flour has less than .5% ash content and a protein content of 7% to 9%.
Double zero flour is very finely ground, much like baby powder. (In the US, the equivalent would be pastry flour).
Pizza dough is a favorite use for 00 flour, although it is also used in pasta. And some recipes call for a mix of 00 flour and other grades like semola (also called semolina).
To find the best 00 flour for pizza, we got out favorite pepperoni pizza recipe and starting making pizzas. Here was one contender:
